Brussels Sprouts with Coconut Ginger Sauce:

Ingredients:

1/2 cup coconut milk

1½ teaspoons fresh grated ginger or ¾ teaspoon powdered ginger

1 teaspoon agave

1 teaspoon soy sauce

Chili garlic sauce to taste

1 teaspoon rice vinegar

3/4 pound brussel sprouts 

1 tablespoon coconut oil

Salt and Pepper

Directions:

Preheat oven to 450degrees. Cut off ends of brussels sprouts and slice in half. Place on a baking sheet and coat with coconut oil. Season with salt and pepper and roast in the oven for 30 minutes or until crispy and brown.

In a sauce pot, combine the coconut milk, ginger and agave. Add chili garlic sauce until your preferred heat level is reached. Whisk ingredients together and simmer for a few minutes, stirring often. When removed from heat, stir in rice vinegar. 

Transfer brussel sprouts and drizzle with sauce. Take a photo, Instagram your brussels and savor.
