This Indian–inspired dessert drink has the body of a milkshake without the cloying sweetness of too much sugar. The rich buttermilk tempers the durian’s pungent flavor, and serving over ice mellows the more extreme onion–like tones. Still, the durian’s musty smell makes sipping difficult, so it’s best to drink in gulps.
Place a half cup chopped durian, 1 cup buttermilk and 1 tablespoon powdered sugar in a blender or food processor and blend until smooth. Pour over ice.
