It’s that time of year again. The leaves are changing color. It seems as though everyone is falling prey to the malady that is the common cold. To those of you who ran around scantily clad during Halloween and are now paying your dues with congestion and stuffiness, this one’s for you. This medicinal recipe will have you back on your feet in no time.
INGREDIENTS 1 whole chicken (keeping the skin on strengthens the flavor of the soup, but if you want to spare yourself the extra fat, you can cut the chicken up and remove the skin) 10 cups water 3 onions 1 teaspoon salt 4 carrots 4 stalks celery 3 parsnips 1 turnip 2 sprigs fresh dill 1 teaspoon pepper
DIRECTIONS 1. Place chicken and all other ingredients into soup pot. 2. Bring to boil, then lower heat and simmer, partially covered, for at least 3 1/2 hours (the more the better — you can’t overcook this). 3. Ladel yourself a bowl and enjoy!
Advice for the oft–sick: make it in bulk, freeze it and defrost it in increments all winter long.
