Apple and Blue Cheese Flatbread
Ingredients: • 1 ball of pizza dough, or store–bought flatbread/lavash/naan if you’re lazy • 1 apple • 1/2 cup crumbled blue cheese • 2/3 cup olive oil • 1 clove garlic • 2 sprigs fresh thyme • 3–4 chives, for garnish
Directions: Preheat the oven to 425 degrees. Chop the apples into thinly halved slices and set aside. Chop the garlic clove and stir it into the olive oil. Stretch out the pizza dough to desired thickness and place on a baking sheet. We found a thinner crust to work better with these ingredients, but if you want a thicker crust that’s fine too. Start by slathering the olive oil mixture onto the dough, making sure to spread the garlic out evenly. Then arrange the apples around the dough and top with crumbled blue cheese. Finally, sprinkle some thyme leaves onto the pizza, but leave the sprigs behind. Bake the pizza for 10–15 minutes until the crust is a golden brown. Garnish with some chopped fresh chives for some green and a little crunch. — Joshua Goldman
Apple Butternut Squash Soup
Ingredients: • 2 tbsp. unsalted butter • 2.5 tbsp. olive oil • 6 sage leaves • 3 garlic cloves, peeled and chopped • 1/2 large white onion, roughly chopped • 1 carrot, roughly chopped • 1 apple, peeled, cored and roughly chopped • 1 large butternut squash, peeled, seeded and cubed (about 6 heaping cups) • 1/2 tsp. cinnamon • 1/2 tsp. ground ginger • 5 cups chicken or vegetable broth
Directions: In a large pot over medium heat, add butter, oil, sage, garlic and onion. Stir occasionally and let cook for two minutes. Add the carrot, apple, squash, and spices. Continue stirring and let cook for 15 minutes. Add broth and cook for 30 more minutes. Once cooled, puree in a blender. — Lauren Gibson
Apple Tartare Ingredients: • 3 apples (diced into small cubes) • Apple cider • 2 oz. of goat cheese • 1 clove garlic • 1/8 stick of butter
Directions: Preheat oven to 350 degrees. Take the three apples and dice them, putting the diced pieces in water in order to hold the color. Drain the water and put the apples in a roasting pan. Pour apple cider on top so that there is just a small layer at the bottom of the apples. Leave that in the oven for five minutes. Take the apples out of the oven and drain any apple cider that remains. Chop up the clove of garlic and put it in the pan with the butter. Let the garlic cook for around 30 seconds and pour the garlic, butter and apples into a bowl together. Then stir. Add the cheese a little bit at a time, stirring to make sure it melts. After all the cheese is melted put the mixture into molds and wait roughly five minutes. —Alex Zimmer
