Ingredients: 6 large eggs ½ cup milk 6 large potatoes, peeled and sliced thinly 2 cups baby spinach 2 onions, chopped olive oil salt and pepper to taste
Directions: Crack the eggs into a bowl, pour in milk and whisk until fluffy. Heat olive oil in a frying pan. Sautee potatoes and onions until potatoes brown along the edges and onions are translucent. Pour the egg mixture into the pan, and make sure that the potatoes and onions are completely covered by egg. Cook on low heat, and then transfer to the oven broiler until the top begins to brown. Remove pan from oven and allow to cool. Place a plate over the top of the pan, and flip the tortilla over so that it comes out onto the plate. Slice into pieces and serve.
