Taco Salad Ingredients: Salad greens, 1 tomato, 1/2 red onion, 1 avocado, 1 can black beans, 1 can sweet corn, olive oil, cilantro tortilla chips Directions: Chop tomato and red onion. Slice avocado. Toss with greens, beans and corn. Toss mixture with crumbled tortilla chips. Top with grated cheese, olive oil, lime and chopped cilantro.

Fried Rice Ingredients: Leftover rice, onion, garlic, ginger, peas, 2 eggs, soy sauce Directions: Chop vegetables and sauté in olive oil. Beat eggs and slowly add to vegetables. Toss in cold, leftover rice. Drizzle on soy sauce (and chili sauce, if you like it spicy) to taste.

Mexican Sopapillas Ingredients: Flour tortillas, vegetable oil (for frying), cinnamon, honey, brown sugar, vanilla ice cream Directions: Mix cinnamon and sugar in a large bowl. Heat two cups of oil in saucepan and fry tortillas until crispy. Remove tortillas, drizzle with honey and sprinkle with cinnamon and sugar. Serve warm with vanilla ice cream.
