3 golden beets (roasted, peeled and cubed)
1 container firm Feta cheese
« lb green beans
1 package basil leaves
Dressing:

2 tablespoons sugar
« teaspoon coarse salt
¬ teaspoon pepper
1 clove garlic
Directions:
Cover the beets in parchment paper and tin foil and place in a 400 degree oven for 45 minutes or until tender. While still warm, peel the beets with a rag or paper napkin (be careful: this tends to be messy). Place the green beans into boiling water for three minutes, drain in cold water and quarter. Cube the beets and Feta cheese. Mix together the dressing ingredients (or take the lazy route and buy Dijon vinaigrette from FroGro). Tear the basil leaves into the mixture. Place in Chinese take-out boxes and delight in the golden glow of Philadelphia.
