Serve this delicious and satisfying dish for brunch, or prepare it as an easy dinner. Make sure the pan you cook with is oven-safe.
Ingredients:
4 tablespoons butter
1 onion
1?2 pound regular or turkey sausage
6 large eggs
1 1?2 cups milk
2 teaspoons minced fresh thyme (or 1 teaspoon dried thyme)
1 cup shredded cheese (cheddar, gruyere, or swiss are good choices)
5 slices sandwich bread
Directions:
Preheat oven to 425 degrees, and place oven rack in the middle position. Chop the onion and sausages into small pieces. Melt the butter in a 10-inch skillet on medium heat, add the onion and sausage, and stir the whole thing around for five minutes or until the onion is light brown. Tear the bread into one-inch pieces, leaving the crusts on, and add to the skillet, mixing with the onion and sausage. Cook for about three minutes, stirring occasionally, until bread is lightly toasted.
While bread toasts, whisk together eggs, milk, cheese, thyme and salt and pepper in a separate bowl. Remove the skillet from heat and stir in the egg mixture until it is slightly thicker and mixed in well with the bread. Press the mix with a spatula to soak the egg into the bread pieces. Transfer the skillet to the oven, and bake for about 10 minutes, until the eggs are puffy and the edges of the pie have pulled away from the skillet edges. The oven is at a very high temperature, so check frequently while baking to make sure the pie isn't burning.
