The George Foreman grill may just be the best thing to hit college campuses since the Internet. Sure, if you're all fancy, you can make these nectarines on your spiffy new gas grill out back. The broiler works too, but the best part is, they're just as tasty when all you've got in your tiny Quad double is your friend George. Even one of those pretty mini colored ones will do. This Italian-inspired dish is great for dessert or brunch, and requires three ingredients and ten minutes. It's sure to fool any guest into believing you actually know how to cook.
4 nectarines (try Trader Joe's at 2121 Market Street or the Clark Park Farmer's Market at 43rd & Baltimore)
1/3 to 1/2 pound ricotta cheese (the fresher, the better; try DiBruno Brothers Italian deli at 1730 Chestnut Street)
2 teaspoons honey
Preheat your George Foreman grill. Cut the nectarines off of the pits (into 3-4 large pieces each), and put facedown on the grill. Cook for about 6-8 minutes, or until fork-tender and slightly golden. While the nectarines are cooking, use a fork to mix the ricotta with 1 teaspoon of honey, stirring to make the mixture fluffy.
When nectarines are ready, drizzle with extra honey as desired and top with ricotta mixture. Serve immediately.
